This unique hand mold would have been used to make "City" or "Mock Chicken". In the Depression era, pork and veal were sold as economical alternatives to chicken. The meat alternatives could be ground and then pressed into a "mock" drumstick, or chicken leg.
The mold is stamped "Chicken Sans Volaille" which is French for "Chicken without Poultry".
